Spring Lollipop Biscuits

Not everyone is a huge fan of Chocolate [who are these people?!], so I've made some Easter-themed shortbread biscuits on a stick to hand out as a happy swap.

I made these using some cheap and cheerful £1 cookie cutters:
and my mixture and method were the same as my Christmas shortbread biscuits post:

125g/4oz unsalted butter
180g/6oz plain flour
55g/2oz caster sugar

Mixing the three ingredients into a dough:
and then rolling the dough to around .5cm thickness [the dough needs to be thick enough to fix a lollipop stick to] and using cookie cutters to make the biscuits.
Line a baking tray with baking paper and arrange the biscuits leaving space of around 2cm between the sides [for expansion as the biscuits bake] and plenty of room for the lollipop sticks to be fixed in place:
I placed my lollipop sticks around half way through the biscuit, in the centre.  Pushing the lollipop stick down in to the dough to secure in place [the theory being that as the biscuits cook and the dough expands, the stick will be covered enough to hold in place securely:
....as a test, I also tried marking the dough with the lollipop stick...but as you can imagine, this expanded when baked and didn't keep shape once baked:
Now pop the biscuits in the oven for around 15 minutes at 190 degrees until golden:
...and leave to cool for around 10-15 minutes:
As the biscuits baked, they expanded over the lollipop sticks as I hoped and secured them firmly in place, without breaking through the bottom of the biscuit:
...these can now be left as they are....
...or you could add some decoration as simple or detailed as you like with icing pens:
...a simple alternative to chocolate if you want to make your own Easter / Spring treats.
